MMOT Success

I have redeemed myself!  My Meatless Monday (on Tuesday) recipe for this week:  Roasted Red Pepper and Cheese Pizza

I scraped yesterday’s dough.  It was still ridiculously sticky.  Not sure what I did wrong, though, because today’s dough was perfect!


The picture is dark because with the time change, I definitely did not finish the pizza before the sun went down!

Whole Wheat Pizza Dough

Adapted from 1,001 Low-Fat Vegetarian Recipes

Serves 3

The Necessities

  • 3/4 cup all-purpose flour
  • 1 package fast-rising yeast
  • 1/4 tsp salt
  • 1/2 cup very hot water
  • 2 tsp honey
  • 1/2 c whole wheat flour

The Steps

  1. Combine all purpose flour, yeast, and salt in bowl.
  2. Add hot water and honey, stirring until smooth.
  3. Mix in enough whole wheat flour to make a soft dough.  Dough should not stick to skin much when you poke it.
  4. Knead dough on floured surface until smooth and elastic (3 to 5 minutes).
  5. Cover dough with bowl and let stand 15 minutes.
  6. Spread dough on pan and cook for 15 to 20 minutes at 425º.

Roasted Red Pepper and Cheese Pizza

The Necessities

  • 1 large red bell pepper, cut into 3/4-inch slices
  • Whole Wheat Pizza Dough
  • 1 cup fat-free ricotta cheese
  • 1/2 cup shredded fat-free mozzarella cheese
  • 1/4 cup shredded fat-free parmesan cheese
  • 1 Tbsp lemon juice
  • 1 clove garlic, minced
  • 12-18 fresh basil leaves
  • 2 green onions, thinly sliced

The Steps

  1. Arrange bell pepper slices in greased foil-lined pan.  Roast at 425º until pepper are tender and browned (20 to 30 minutes).
  2. Spread dough on greased 12-inch pizza pan, making rim around edge.  Bake dough at 425º 12-18 minutes.
  3. Combine cheeses.  Spread evenly on crust with lemon juice and garlic.  Top with red pepper slices, basil leaves, and green onions.
  4. Bake at 425º until crust is browned, 12 to 18 minutes.


For next time:

  • Cook dough a little less initially.  Mine burned and then because it was already so cooked when it first came out of the oven, I didn’t get to leave the pizza with the toppings on it in the oven long enough for the cheese to melt.

I successfully made my first pizza!!!!  Yes!  MM has been redeemed!
