Meatless Monday: Week 6

You probably know this, but if you don’t, I’m training for a marathon right now. I swear I’m going to run outside for my training, despite the ridiculously cold temperatures, the history of the past (like the fact that I wussed out last night and ran on the treadmill instead) not withstanding. I swear!

Now, happy Meatless Monday!

Since I don’t have a lot of time this morning, I’m going to leave you with some of the best recipes from around the blogosphere for your dining pleasure!!

Breakfast
If it’s as cold where you are as it is here, you need a bowl of oatmeal to warm you up!! Kath’s blog has everything you need to know about oatmeal and it’s amazing possibilities!

Lunch
Oh She Glow’s looks phenomenal! I love pretty much anything with sweet potato and this salad is full of chickpeas for your protein!

Dinner

I’ve been having such a craving for Hawaiian pizza. Which is weird because I’ve never actually tried it. But anything with pineapple is good. Look for my version of the Hawaiian pizza coming up!!

    I did 99% of my training runs outside last winter (with a few days off for the blizzards) -it is amazing how quickly you get used to weather in the teens!
